I had to try it.
Enter: my watermelon. And a very large knife.
I sliced the sides (but not the whole way around).
I went around the edge with the knife to cut away the rind. I did nice cross-hatch cuts through the melon.
And VOILA!
Except it wasn’t that easy. I’d totally use this method again, but it was messy and required a smaller knife. And see how he went around the rim of the melon like it was no biggie? Yeah, not that simple. Mine looked like this after I removed the inside:
